How do I mill freshly cut trees?

I have the opportunity to take down 18" diameter cedar trees. I would like to have them milled for lumber. Should I peel the bark first and let them dry out or should I leave the bark on and have them milled when green, then let it dry? I wouldn't want the wood to 'check' after milling or beforehand. What is recommended for the milling procedure? Thanks!
